Monovarietal 100% Mencia. Maceration with its skins for about 15 days with stirring between 1 and 3 times a day. Wild yeasts. Later pressed and preserved in a stainless steel tank. Natural malolactic fermentation. Bottled gradually according to need, minimum of 3 months in bottle prior to release on the market. Production of 1,000-2,000 bottles annually. Sporadic production, it is not made every year. Grapes from plots purchased locally.
